pH Effect on Properties of Surfactant-free Oil-in-water Emulsion Prepared with Oleic Acid

Size distribution, ζ potential, and yield of surfactant-free oil-in-water (O/W) emulsion prepared with oleic acid were measured at various pHs after seven days from the emulsification.
