2 Abstract: Chemical composition, bioavailability of minerals and in vitro digestibility of proteins in karkade seed (Hibiscus sabdariffa L.) as affected by soaking, sprouting and cooking were studied. The different methods showed varied deviation of nutrients and antinutrients from the raw seeds.
