Contents of D-chiro-Inositol, Vitexin, and Isovitexin in Various Varieties of Mung Bean and Its Products

Mung bean (Vigna radiata L.) is rich in bioactive compounds including D-chiro-inositol (DCI), vitexin, and isovitexin, which have beneficial effects on patients with diabetes.
