Abstract
Substituting SFAs by oleic acid in the diet improves insulin sensitivity in humans. Preclinical studies have shed light on the molecular mechanisms by which oleic acid prevents palmitic acid-induced inflammation and insulin resistance in adipose tissue, liver, skeletal muscle, and pancreas.
