Abstract null null The influence of acidity regulators and buffers on the formation of acrylamide (AA) and 5-hydroxymethylfurfural (5-HMF) in French fries and the underlying mechanism were evaluated. Prior to frying, the potato strips were dipped in the corresponding acidity regulator solutions or buffers for 30 min at room temperature. The results showed that acids inhibited AA formation, but increased 5-HMF levels. The AA level decreased and 5-HMF level increased with decreasing pH of potato s...

Abstract null null The interaction of proteins with anthocyanins (ACNs) gives rise to significant improvements in their functional properties. To explore the interactions between whey protein isolate (WPI)/bovine serum albumin (BSA) and blueberry ACNs, light (5000 Lux, 7 days), heat (85 °C, 2 h), sucrose (0.25 mg/mL), and vitamin C (0.15 mg/mL) were used to accelerate the degradation of ACNs. Through the observation of color changes and variations in the free radical scavenging rates, WPI and BS...

Abstract Each day huge amount of plants are consumed, thereby a lot of by-products are dumped into the ashcan directly which are rich in highly nutritious bioactive substances: dietary fiber (DF). DF, defined as the seventh nutrient for humans by nutritionists, has many benefits for our health, such as improve the intestinal flora, decrease the probability of obesity and cardiovascular disease, etc. Thus the study on the modification of plant DF to obtain the high yield and quality DFs (includin...

Abstract null null Increasingly attention has been paid to the active substances in grapefruit peel. In this study, insoluble bound phenolic compounds (BP) were released from grapefruit peel insoluble dietary fiber (GP-IDF) by microwave extraction (M-BP), enzymatic hydrolysis (E-BP) and combined microwave and enzymatic treatment (ME-BP). The results showed that the yield of ME-BP was the highest (148.856 ± 0.620 GAE mg/100 g), and conditions of microwave treatment (microwave power, temperature, ...

Abstract null null The chemical compounds including lipid and protein in green coffee beans are important indicators of the final quality of the coffee products, which are usually determined by time-consuming and destructive chemical methods. Therefore, a fast and reliable method was attempted to exploit by near-infrared (NIR) spectroscopy combined with partial least squares (PLS) regression for the determination of lipid and protein in green coffee beans from different origins. Orthogonal signa...

The incidence of the intestinal disease is globally increasing, and the intestinal mucosa immune system is an important defense line. A potential environmental cause to regulate gut health is diet. Cyanidin-3-O-glucoside is a natural plant bioactive substance that has shown rising evidence of improving intestinal disease and keeping gut homeostasis. This review summarized the intestinal protective effect of Cyanidin-3-O-glucoside in vivo and in vitro and discussed the potential mechanisms by reg...

Abstract This paper investigates the potential of composite gels, formed by the pH-treated whey protein isolation (WPI) and Mesona chinensis polysaccharides (MCP) solutions, as jelly processing ingredients. The functional, gelation properties, and microstructure of MCP-WPI gels were investigated under specific conditions (pH 4-10). The results showed that MCP and WPI can form a stable gel under the condition of pH 10, ζ-potential increased and the particle size decreased with the increase of pH....

Abstract The previous research has indicated that Ganoderma atrum polysaccharide (PSG-1) indirectly affects the immune function of dendritic cells (DCs) in intestinal-like Caco-2/DCs co-culture model, in which NF-κB and MAPK pathway play an essential role. To explore the interaction of Caco-2 in the interaction between the intestinal epithelium and its internal immune cells, the intestinal-like Caco-2/DCs co-culture model was developed. All transcripts of Caco-2 treated with or without PSG-1 wer...

Abstract The research aimed to assess the effects of high-temperature cooking assisted enzymatic method on the structural, physicochemical and functional properties of soluble dietary fiber (SDF) from tea residue (GM-SDF). Under the optimal extraction conditions obtained by response surface methodology, the GM-SDF yield was significantly higher than that of untreated tea residue (U-SDF). It could be found results showed that GM-SDF possessed more hydrophilic groups, higher crystallinity, as well...

Blueberry anthocyanins are well known for their beneficial biological activities. However, the poor bioavailability of anthocyanins limits their functional capacity in vivo. Our current study aimed to detect the effects of α-casein on the absorption of blueberry anthocyanins and their metabolites in rats. Blueberry anthocyanins with and without α-casein were intragastrically administered to two groups of rats and their blood samples were collected within 24 h. Results illustrated that rapid abso...
