Abstract
Cyperus esculentus starch was treated by pullulanase debranching and nanoprecipitation to prepare resistant starch nanoparticles. Amylose contents, rheological properties of debranched starch and the size, crystalline structure, resistant starch contents of the prepared starch nanoparticles were investigated.
