Abstract
A high Mw (5012 kDa) polysaccharide (PNPS) from the fruiting body of Pleurotus nebrodensis was isolated using water extraction followed by ethanol precipitation. The structural characteristics and in vitro fermentation behaviors of this polysaccharide was investigated.
