Abstract
The objective of this work was the recovery of chitosan by ultrasound-assisted extraction (UAE) from white shrimp (Litopenaeus vannamei) chitin, and the physicochemical and structural characterization of the obtained biopolymer, as well as its antimicrobial effect on Pythium ultimum growth.
