Abstract
The gellan gum was coupled with hydrophobic polyphenols, curcumin and naringenin using dicyclohexylcarbodiimide and dimethylaminopyridine reaction. The formation of conjugates was ascertained by spectral, thermal, X-ray diffraction, and scanning electron microscopic studies.
