Abstract
Sichuan pepper, commonly used as a food seasoning, possesses unique anti-diabetic properties. This study uses ultra-high performance liquid chromatography coupled with quadrupole time-of-flight tandem mass spectrometry (UHPLC-Q-TOF) to elucidate the chemical profile of Sichuan pepper.
