Abstract Recent years have had an increased demand for goat milk and its products. The quality of goat milk is determined, in part, by the fatty acid (FA) profile, but there is little information about breed influence on the FA profile of goat milk. The aim of this study was to describe and compare FA profiles of goat milk produced by Saanen and Swedish Landrace breeds. FA profiles were analysed by gas chromatography with a flame ionisation detector using 100 m capillary column coated with ionic liquids of extreme polarity (SLB-IL111). The amounts of 19 FAs were measured. Analyses indicated that FA profile in the milk of Saanen goats differs from that of Swedish Landrace goats with the first having higher proportions of most SFA-s and the second having lower proportions of C16:0, C16:1 and C18:1. This knowledge enables the improvement of the quality of goat milk and goat milk-derived products.

Abstract Bovine colostrum is potentially valuable source of essential fatty acids (FAs), but so far only few studies have made the effort to estimate FA composition of this potential resource. The aim of current research was to fill this gap with selecting and validating an accurate procedure for the analysis of the composition of the FAs in bovine colostrum. We used colostrum samples of Holstein-Friesian cattle from Marja experimental farm as a test material. The validated method includes deriv...

Abstract Fatty Acid Synthase (FASN) is a multifunctional protein, catalyzing the de novo fatty acid (FA) synthesis, its high mRNA expression in goat mammary epithelial cells (GMECs) substantiated by the medium to high heritability of milk fat (MF), makes it a candidate gene for association analysis with milk fat profile. The study aimed to develop markers of Capra hircus FASN to improve healthfulness of goat milk FAs and to investigate early lactation MF profile. 300 milk samples were collected,...
Summary The study tested the hypothesis that certain pastoral forages and olive by-products, available in arid areas, may positively influence fatty acid composition and physicochemical properties of goat's milk. Thirty indigenous goats (body weight = 25.2 kg; age = 4.1 years) were allocated to three groups. During 60 days, the goats received ad libitum either dried olive leaves + Stipa tenacissima (group OL), khortane grass hay (group Ko) or oat hay (control diet, group OH). Milk samples were c...

Abstract A detailed dairy fat fatty acid (FA) profile can generally be achieved by gas chromatography using capillary columns with polar cyanoalkyl polysiloxane stationary phases (CPSP). However some compounds overlap and cannot be discriminated after a single run. In this work a new, extremely polar phase column (SLB-IL111) was used to complement the analysis carried out by a CPSP column. Separation of the FAs in a variety of milk fats using both a 100-m SLB-IL111 column and a 100-m CP-Sil 88 c...

Diagnostic models based on milk fatty acids should include experimental information.Radial kernel-based SVM are superior to develop models based on all milk fatty acids.Expert knowledge allowed to select key milk fatty acids.Linear models are preferred when relying on a selected subset of milk fatty acids. Subacute ruminal acidosis (SARA), characterized by low rumen pH, is one of the most important metabolic disorders in dairy cattle. As dairy cows experiencing SARA often do not exhibit overt cl...

The objective of the study was to characterize the fatty acids profiles of goat milk and its fermented products i.e. yogurt and concentrated yogurt. Fresh milk from Peranakan Etawah goats was collected directly from local goat farmers, and processed into stirred-type fresh yogurt. The yogurt was then further processed into concentrated yogurt using Berge method. A total of 26 fatty acids were detected in milk, yogurt and concentrated yogurt, comprised of both saturated and unsaturated fatty acid...

ABSTRACT This paper investigated the limits of the current approach for the determination of the fatty acids profile of milk fats from proton nuclear magnetic resonance data based on the hypothesis that the signal at 0.96 ppm, currently assigned in the literature as a marker for the “short chain fatty acids,” is generated only by the butyric moiety (not by all of the short-chain fatty acids, which also include C6:0—caproic acid). The hypothesis was tested and experimentally confirmed. Moreover, ...
