Abstract
Acid-soluble (ASC) and pepsin-soluble (PSC) collagen were extracted from the skin of Nile tilapia (Oreochromis niloticus), purified and physicochemically examined. Amino acid content analyses revealed that glycine accounted for approximately one-third of the total amino acid residues.
