Abstract
Four lactic acid bacteria, Leuconostoc mesenteroides subsp. mesenteroides, were isolated from aguamiel the sap obtained from Agave salmiana from Mexico and identified by 16S rRNA gene sequence analysis. The probiotic potential of these strains was evaluated and compared with a commercial probiotic (Lactobacillus plantarum 299v) from human origin.
