Latent production of angiotensin I-converting enzyme inhibitors from buckwheat protein

The latent production of angiotensin I-converting enzyme (ACE) Inhibitors from tartary buckwheat (BW) was investigated, and the peptides responsible for ACE inhibition characterized.
