Abstract
Thirteen kinds of citrus essential oils and their volatile flavor constituents were investigated for tyrosinase inhibitory activity. Eureka lemon, Lisbon lemon, Keraji, and Kiyookadaidai significantly inhibited the oxidation of l-dihydroxy phenylalanine (l-DOPA) by mushroom tyrosinase.
