Effects of the modification of casein components by malonaldehyde were investigated. Ultraviolet and fluorescence spectra, the determination of amino groups, SDS-polyacrylamide gel electrophoresis and amino acid analysis indicated that malonaldehyde reacted with lysine residues of protein.
